
Before your airplane meal takes to the skies alongside you, it undergoes a significant journey. From the specialized factory kitchen to the galley of the aircraft. As a flight attendant, I serve food to the passengers on every flight, but where does that food come from? Let's take a behind-the-scenes look at our inflight catering provider.
The culinary process
Behind the tray filled with your airplane meal lies an impressive journey that starts in the logistics center, where employees carefully select ingredients. These ingredients then head towards the kitchen of the specialized factory. In the kitchen, a team of chefs is busy stirring pots and pans.
The chefs not only consider taste but also the specific conditions above the clouds. Did you know that the air in the airplane is extremely dry? The chefs don't want your piece of meat to dry out, so they have some secret tricks for that. The ingredients pass through various chefs before immediately disappearing into the refrigerated storage.
The trolley: a mobile refrigerator
The next stage involves portioning. Distributed across several trays, employees assemble the food on your tray. That tray then disappears into a trolley that you'll also see in the airplanes. This trolley acts as a kind of mobile refrigerator cooled by dry ice blocks.
The journey from kitchen to aircraft


Now that your meal is ready and packed, the transport to the aircraft begins. Every day, dozens of trucks filled with trolleys of food and drinks make their way to the airplanes. Of course, the right trolley must reach the right aircraft.
It's a precise logistical process. Moments before you board, suppliers roll the trolleys filled with airplane meals on board. The crew then checks the quantities and specific reservations, such as lactose- or gluten-free meals.
Countdown onboard


Once above the clouds, we begin preparations for meal service in the aircraft kitchens. We fire up the ovens and heat up your meal. Not long after, we pass through the aisle with the trolley until we reach you, and your airplane meal, after a long journey, appears on your tray table.
